Watermelon Slushie


This is a great slushie recipe that has just fruit, ice and honey. When I make it, I put the slushies in cups to drink right away and then freeze leftovers into popsicles.
Crush 4 cups of ice. (I have a slushie maker that makes the ice fine). In blender, puree 3 cups fresh fruit (watermelon, honeydew, cantalope are all good) and add 3 Tbsp. honey. I just mix the ice and fruit and pour into cups.

Sweet Pickles

16 cups cucumbers (7-8)
2 cups onions
3 green peppers
1/2 cup salt
1 cup vinegar
1 cup water
3 cups sugar
2tsp. celery seed
2tsp. turmeric
1 tsp. cinnamon

Soak sliced cucumbers in salt water for 1 hour. Rinse and drain. Mix cucumbers, peppers, onions and liquid. Cook for 20 minutes. Pour into jars. Process (boil) for 10 minutes. Makes 8 pints.

Zucchini & Corn Cakes


I know you are probably thinking I love zucchini, but actually there is just a lot around in the summer and I like to find different ways to use it. My mom found this recipe and made it tonight. It is from Wegman's and we really liked it, but will make a few changes next time.

3 medium zucchini, cored, seeded, shredded (about 5 cups)
2 ears corn, shucked, kernels removed (about 2 cups) We will add more corn next time.
2 green onions, trimmed and chopped We would also add more onion
2 Tbsp fresh oregano or 1 tsp. dried I think 1/2 tsp. would have been plenty.
1 1/2 cups Bisquick
1 tsp. salt
1/2 tsp. pepper
2 large eggs
1/4 cup water
Vegetable oil

Blend zucchini (we drained it), corn, onions, oregano, Bisquick, salt, pepper, eggs, and water in bowl until well-mixed. Heat oil in large skillet or griddle. Drop 1/2 cup batter and spread into pancakes. I personally liked making smaller ones and they would make for great appetizers. Cook on each side until lightly browned.

Sauce with Zucchini

Saute quarted zucchini and chopped onion in olive oil. Mix one can diced tomatoes and one can tomato sauce with garlic salt, red cayenne pepper (little) and basil (lots). Add sauted vegetables to it and simmer for 30 minutes. Serve over pasta.

Chocolate Zucchini Bread

Ingredients:
3 cups flour
1/2 cup cocoa
1tsp. salt
1 tsp. baking soda
1/4 tsp. baing powder
2 cups sugar
3 eggs
1 cup oil
1 tsp. vanilla
2 1/2 cup grated zucchini
1 cup mini or regular chocolate chips
1 cup chopped walnuts

Combine dry ingredients. Add remaining ingredients except chips and nuts. Blend well. Add chips and nuts. Bake in 2 (9X5) greased and floured loaf pans at 350 degrees for 1 hour.

Marinated Cucumber Salad

Ingredients: 1 large cucumber sliced thin, 1 small onion thinly sliced, 1/4 cup vinegar, 2 Tbsp. sugar, 1/2 tsp. celery seed

Mix all ingredients. Cover and chill for at least 2 hours or up to 5 days, stirring occassionally.

Shrimp with Linguine


Ingredients - shrimp, butter, olive oil, garlic, 1/4 cup sherry, parsley, linguine
Saute shrimp and garlic in butter. I start with 4Tbsp. butter and add more depending on how much linguine I make. Cook linguine according to package (I usually make a little more than half a box). When shrimp is heated, add other ingredients. I love garlic so I put 4 spoonfuls. Add olive oil, 1/4 cup sherry and parsley. I do not measure the olive oil, but it is probably around 1/4 cup. Mix the linguine with sauce and serve immediately. I like parmesan cheese on top and a vegetable on the side.
