Bunny Cake

I made homemade chocolate cake and homemade vanilla frosting, but the recipe calls for Betty Crocker carrot cake mix and Betty Crocker whipped white frosting.

First T-Ball Practice



Benjamin had his first t-ball practice yesterday. The weather was absolutely gorgeous and Benjamin had a great time. He is pretty good too! The kids spent the entire day outside playing.

Crock Pot Macaroni and Cheese

Ingredients:
1 package (16oz.) macaroni - cooked and drained
1 Tbsp. oil
1 can (13oz.) evaporated milk
1 1/2 cups milk
1 tsp. salt
3 cups shredded sharp cheddar cheese
1/2 cup melted butter

Lighlty grease crock pot. Toss macaroni and oil. Add all remaining ingredients. I also add some pepper. Stir, cover and cook on low 3-4 hours, stirring occassionally.

Soft Pretzels

Ingredients: 1 package yeast, 1 1/2 cups warm water, 1 Tbsp. sugar, 4 cups flour, 1 egg

Put yeast in bowl and add warm water. Stir. Add sugar and stir. Add 4 cups flour. Mix then knead. Pull off pieces and shape into pretzels. Put on a greased cookie sheet. Beat egg and brush tops of pretzels. Bake at 425 for 12-15 minutes or till golden brown. Sprinkle with salt or cinnamon and sugar. Enjoy!

Salad with Quinoa and Beans


On another blog, I got the idea to put quinoa in salad so I changed the recipe to make it my own.
mixed greens
1/4 cup quinoa
black beans
half grape tomatoes
sliced cucumber
chopped onions
drizzle with olive oil and balsamic vinegar
salt and pepper

Salsa


5 cups cored chopped tomatoes (I leave the skin on)
2 cups chopped green pepper (I added one chili pepper)
2 cups chopped onion
1/2 cup vinegar
lime juice
minced garlic
chili powder
garlic salt
basil
parsley
salt
pepper
I mix it all together and put in jars. I did not cook or process the jars to be canned. We just store in the fridge and eat right away. Yummy.

Watermelon Slushie


This is a great slushie recipe that has just fruit, ice and honey. When I make it, I put the slushies in cups to drink right away and then freeze leftovers into popsicles.
Crush 4 cups of ice. (I have a slushie maker that makes the ice fine). In blender, puree 3 cups fresh fruit (watermelon, honeydew, cantalope are all good) and add 3 Tbsp. honey. I just mix the ice and fruit and pour into cups.
